Chandri’s stuffed peppers

This is one of my favorite meals. Tonight Chandri told me how to make it.

green peppers cut in half and seeded

for the filling blend

1 onion

garlic

a little chili powder to your taste

a spoon of fresh cilantro

a handful of fresh coconut

a handful of peanuts

Stuff the peppers with the filling, put in a pressure cooker, add a little water and oil to the pot (Chandri uses sunflower oil), cover and cook until the peppers are tender–just a few minutes in the pressure cooker. Serve with rice. Delicious!
